The Food Matters Project: Mexican Fruit Salad

Since Bittman suggested playing around with different ingredient combinations for this dish, I took him up on that. Also, I was really craving a snack over the weekend and this salsa, inspired by the original recipe, is what I came up with.

It combines the Mexican flavors of jalapeno and black beans with sweet peaches. Just finely mince half of a jalapeno, dice 2 peaches, and add one can of rinsed black beans. Toss it with some salt and pepper, and you have yourself a healthy weekend dip to nibble on.

Yum! Love when the best recipes come from so few good ingredients. This sounds like a delicious, easy snack to keep handy for impromptu Summer happy hours :-).

Black beans and peaches sound very interesting together and I would love to try it as soon as I get ahold of local peaches!
